Recipe of the Week: Sweet & Sour Chicken
Natural ingredients make this tangy Sweet & Sour Sauce appealing to the eye and tempting to the tongue. Unique ingredients like brown sugar and pineapple juice bring out the sweetness, while vinegar and soy sauce bring out the sour side. Serve with chicken chunks and vegetables to create an Asian Classic!
JTM Products Required:
73060 – Sweet & Sour Sauce
Ingredients:
5 lb – Breaded Chicken Nuggets
5 lb – Cooked Rice
12 oz – Drained Pineapple Chunks
8 oz – Diced Red Bell Peppers
8 oz – Diced Green Bell Peppers
5 lb – Sweet & Sour Sauce
Instructions:
1. Deep fry breaded chicken nuggets. Hold hot.
2. Heat Sweet & Sour sauce and drained pineapple chunks. Hold hot.
3. Cook Rice. Hold hot.
4. In full size hotel pan, blend sauce, bell peppers, and pineapple. Add hot chicken nuggests and stir until ingredients are coated evenly with sauce.
5. Portion 6 oz cooked rice in bowl.
6. Portion 8 oz Sweet & Sour Chicken over rice. Enjoy!
Yield: 24 servings

Recipe of the Week: Chipotle Chicken Enchiladas
A Mexican favorite made with shredded chipotle chicken blended with corn and wrapped in a flour tortilla, then smothered with enchilada red sauce and queso blanco sauce, topped with shredded cheese and baked to perfection.

Ingredients:
3# – Enchilada Sauce
5# – Shredded Chicken Chipotle Chicken with Corn
2.5# – Queso Blanco Sauce
1# – Shredded Cheddar Cheese
40 – 6″ Flour Tortillas
Instructions:
Heat JTM chicken taco meat, Enchilada Sauce and Queso Blanco (HACCP Control Point 165* or Higher) and hold hot.
-Using approx 12 oz. of heated JTM poco Sauce, coat bottom of a full size pan
-Place 2 oz of heated JTM Chicken Taco in the center of the tortillas
-Roll totillas leaving ends open and place in the full size pan (20 per pan)
-Ladle an additional (12 oz.) heated Poco Sauce over the enchiladas
-Drizzle heated Queso Blanco (20 oz.) over the enchiladas
-Sprinkle shredded cheese (8 oz.per pan) over the enchiladas and bake until cheese is melted
Optional garnish:
Chopped cilantro, parsley or diced jalapenos

Try using shredded chicken taco, Cilantro chicken, Cajun chicken for a tasty variation
